Makes: 2 sweet potatoes
2 medium-sized sweet potatoes, washed, unpeeled
250g canned crushed tomatoes
100g canned four mixed beans
1 tbs chilli flakes
pinch of pink rock salt
1/4 cup black beans
1/4 cup corn kernels
half a fresh avocado, smashed
2 tbs hummus
1. Cook sweet potatoes in oven for 45-50 mins at 220 degrees
2. Once the sweet potatoes are nearly cooked, start on the tomato and bean mix. Place the crushed tomatoes, mixed beans, chilli flakes and salt in a small saucepan. Keep on medium heat for about 5 minutes and constantly stir until the mixture is hot.
3. Once the sweets are cooked, cut in half and allow them to cool for a couple minutes before putting the toppings on
4. Top the sweets with the tomato and bean mix, black beans, corn, smashed avo, hummus and parsley.
